It's not always necessary to replace bread flour with whole wheat flour when replacing white or even all-purpose flour. Different flours contain varied quantities of gluten and moisture absorption.



Instant yeast saves time because it doesn't need to be dissolved. Traditionally, active-dry yeast needed to be dissolved. The new formulation allows it to be added right away to your flour.
