INSTANT POT PENNE ALLA VODKA

On a hectic night, this penne alla vodka is the ideal comfort food! In one pot, everything comes together in around 45 minutes. It's a filling supper made from cupboard essentials that is quite economical. Outstanding with a glass of wine. Put some Parmesan and fresh flat-leaf parsley on top of each plate.

INGREDIENTS:

  • 2 tablespoons unsalted butter

  • 1 tablespoon olive oil

  • ¾ cup finely chopped yellow onion

  • 3 cloves garlic, minced

  • ½ teaspoon crushed red pepper

  • ½ cup vodka

  • 2 ½ cups water

  • 1 (16-ounce) package of uncooked penne pasta

  • 2 teaspoons kosher salt

  • 1 (28-ounce) can of crushed tomatoes

  • ½ cup heavy cream

  • ⅓ cup grated Parmesan cheese

  • ¼ teaspoon ground black pepper

DIRECTIONS:

Select the Sauté function on a multipurpose pressure cooker (such as an Instant Pot). Choose the high-temperature setting and let the pot one to two minutes to warm up. Include butter and oil. Add the onion and stir continuously for approximately 3 minutes, or until transparent. Stirring often, sauté the garlic and red pepper flakes for one minute.



Vodka should be added and cooked for three minutes or until reduced by half. Abort the saute function. Salt, water, and penne are stirred in. Do not stir after adding tomatoes to the penne. Lock the lid by closing it. Set the timer for 4 minutes while choosing high pressure in accordance with the manufacturer's recommendations. Give the pressure 10 to 15 minutes to build.


Following the manufacturer's directions, slowly relieve the pressure using the quick-release technique, which should take around 5 minutes. open, and take off the lid. After adding the cream and Parmesan cheese, wait for three minutes. Add pepper and stir.
